For the past week since I bottled the Witty Monk, the bottles have been resting comfortably on a shelf in our laundry room.

The bottles are now rock-hard and it’s clear the second fermentation is now taking place. Additionally, the cloudy yellow sediment I mentioned when I first bottled it has now settled to a fine layer on the bottom.
The beer is now translucent but I can’t guess its color because of the brown plastic of the bottles.
