I checked up on the Witty Monk fermenting in the laundry room and was suprised to find that the bottles were even harder than before.
The second fermentation really seems to have taken off and it’s clear now why the plastic PET bottles that come with the kit are so heavy duty. I have no doubt that weaker bottles would have blown up by now.
The other change from last weekend was that condensation is beginning to collect on the inside necks of the bottles. I’m presuming it’s from the continued fermentation.
