Another week another trip into the laundry room to give the resting bottles a dusting.
Clarity and pressure in the bottles remains unchanged from last week but the silt layer on the bottom seems to be a little less sensitive to movement.
One thing I’ve been thinking about is that, if this batch comes out good, I’ll buy a bunch more plastic PET bottles so that I can make other batches while previous ones are slowly moving through the room temperature and cold conditioning phases of the process.
I’m half-tempted to take one of the bottles and stash it in the fridge to begin its cold phase early just to see if all this effort’s been worthwhile, but I’d like to follow the instructions to the letter the first time around to ensure that all the bottles will be uniform in taste and aging.
By my count, there are two more weeks until we move to the fridge. Yippee!
